Blanching won’t clean all the pecticides out because they go deep inside the vegetables but it will cleanse the surface along with cleaning inside the florets. An occasional arugula salad or cup of coleslaw is not going to do harm to most folks, but it would be wise not to make a habit of eating or drinking any of these vegetables in raw form. As you may ask, many of these vegetables are commonly included in salads and juices in raw form. They contain chemicals that block the production of thyroid hormone in your body. These should be cooked or as minimum deeped into some hot water to blanch before eating or juicing. But, of course, there are vegetables that should not be eaten raw like cruciferous vegetables (arugula, broccoli, kale, cauliflower, cabbage, turnip, collard greens, bok choy, brussels sprouts, radish, rutabaga, and watercress). Mostly we use raw vegetables in juicing because they have much more vitamins and minerals than after heat processing. ![]() Yes, sure, all vegetables here (beets, sweet potatos, etc) are raw and not cooked in these specific recipes.
